Vegetable Biryani

Vegetable biryani is a very aromatic, flavorful rice dish. It has layers of flavors and lot of color to it. Rice is cooked to perfection with the spices. This dish is one my favorites, which i learnt from my friend Manju’s mom. This was one of the dishes aunty had made for us, when she was visiting Manju years ago. It tasted soo yummy, I immediately took the recipe from her and have been trying to perfect it ever since :). This is not one of the quick make recipes. It needs a little prep work, but the end product is worth the effort :)..

Vegetable Biryani-2

Ingredients

rice 1 cup
onion 1 1/2, chopped finely
tomato 1, chopped finely
green chilly 1, slit
red chilly powder 1/2 tsp
pudina/mint leaves 1 cup
salt to taste
turmeric 1/2 tsp
lemon juice 3-4 tsp
yogurt 6 tsp
oil 10 tsp
garam masala powder 1 tsp
beans 1 cup, chopped small
carrot 1 cup, chopped small

for powder 1
cinnamon 1 1/2 inches
clove 2
soump 1 tsp
bay leaf 1
cardamom 1

for masala 1
green chilly 2
ginger 1 inch
garlic 4 pods
pudina 1 1/2 cups
cashew 10-12

for masala 2
coconut grated 4 tsp
water 1/4 cup

for layering
pudina 2 cups chopped
saffron 1/2 tsp
milk 1/4 cup
orange food color 1 pinch (optional)

Method

making rice
Bring water to boil in a large pot with 1 tsp oil, salt (may be 2 tsps) and lemon juice.
Add the washed rice and let cook on low flame for 6-7 mins or till rice is half done.
Drain the water from the cooked rice and wash it with cold water to stop the cooking.
Set this aside.

making the powders and masala
Make a powder of all the ingredients in powder 1.
Set this aside.
Fry all the ingredients in masala 1, with 1 tsp of oil.
Grind this into a coarse paste without water.
Set this aside.
Blend coconut into a smooth paste with lil water.
Set this aside.

making veggie masala
Half cook the beans and carrot in microwave with little water. (for about 6 mins)
Heat 7 -8 tsp of oil in a pan.
Add the powder 1, garam masala, onion and fry till onion turns pale pink.
Add the tomatoes, green chilly slit, red chilly powder, pudina and fry till oil separates.
Mix in the half cooked veggies, turmeric, salt (just add salt needed for the veggie masala, as rice is already cooked in salt water), masala 1, masala 2 and curds.
Add lil water (don’t add too much water, else will be hard to use this mixture for layering) and cook till it starts to boil, so that the spices are induced well in the veggies.

Soak saffron and food color in milk for 5 mins.
In a big dish, add one layer of the cooked rice, pudina leaves, add few drops of the saffron milk and 3-4 tbsp of veggie masala.
Repeat this with another layer of rice and masala.
Top layer will have only rice, saffron milk and pudina.
Cover this dish tightly and cook it on low flame for about 10-15 mins.

Yeah!!! the veggie biryani is now ready. Serve this with onion, tomato, cucumber raita.
