Peanut Khara Chapathi

Happy New Year 2023! Chapathi a whole wheat flatbread that is flavored with peanuts, cumin seeds and green chili. A family favorite recipe that I learnt from my mother-in-law. When she visited US for the first time, she made sure to take few of these chapathi on every trip. It was so handy during the times when we were driving long distances. This chapathi stays fresh for few days and is tasty, needs no side dish. The peanuts are a great addition which brings in texture and elevates the taste.

Ingredients

peanuts 1 cup
green chili 10
coriander 1/2 cup
curry leaves 10
jeera/cumin seeds 1 tsp
whole wheat flour 1 cup
rice flour 1/4 cup
all purpose flour 2 tbsp
salt 1 1/2 tsp or as per taste
oil 3 tsp
water 1 cup

Method

Dry roast the peanuts and set aside till it comes to room temperature.
Grind the coriander, green chili, curry leaves and peanuts in to a coarse mixture without adding water.
In a big bowl add the whole wheat flour, rice flour, all purpose flour, jeera/cumin seeds, oil, salt and the coarsely ground mixture.
Add water lil at a time and mix the ingredients to form a soft dough.
Let it rest for 20 mins.
Divide the dough into 8 equal parts and roll each part into a smooth ball.
Take each ball on a lightly floured surface and with the help of a rolling pin flatten the dough as much as possible.
Heat a nonstick/cast iron pan, cook the chapathi well on both sides with a drizzle of oil.
Serve hot with ghee(clarified butter).
