Paneer Bhurji – Amritsar street style

Paneer dishes are such a fav to all of us. This is one classic dish made with paneer, that is enjoyed by everyone. In the era where all of us are looking to add more protein to our meals and looking for different ways to cook paneer, as paneer being one of the good source of protein. This dish will work great as it can be served as side with roti, as a stuffing in a wrap or a sandwich. This street style recipe from Amritsar, is so delicious and aromatic.

Ingredients
for besan mixture
roasted besan 1 tbsp
kasuri methi 1 tsp
coriander/dhaniya powder 1/2 tsp
turmeric powder 1/2 tsp
garam masala 1/2 tsp
black salt 1/2 tsp
curd 4 tbsp
milk 4 tbsp

for ghee red chili powder mix
ghee 1 tbsp
kashmiri red chili powder 1 tsp or as per taste

for paneer bhurji
ghee 1 tbsp
onion 1, finely chopped
green chili 1 , slit
tomato 2, finely chopped
ginger 1 inch, thinly sliced
water 1/4 cup
salt to taste
paneer 100 grams
fresh coriander finely chopped 2 tsp
lemon juice 1 tsp (optional)

Method

preparing the besan mixture
Add all the ingredients in the besan mixture section in a bowl and set aside.
For the oil and red chili powder mix, heat 1 tablespoon of ghee in a pan.
Once the ghee is hot, add the red chili powder and immediately turn off the flame.
Pour the ghee and red chili powder mix into the besan mixture that is set aside and mix well till everything combines.

making the paneer bhurji
In a pan, add 2 tablespoon ghee, onion, green chili, and tomatoes.
Sauté for a few minutes then add ginger salt to taste and continue to cook till the tomatoes are slightly mushy.
No pour the basin mixture that is saved and mix well. Note: can add about 1/4 cup of water if needed to adjust the consistency.
Then add crumbled paneer, finely chopped fresh coriander and lemon juice(optional).
Give everything a good mix, cook for 2 – 4 mins and it’s ready to serve.
