doodhi 1 grated (about 2 cups)
carrot 1 grated
sugar 1/2 – 3/4 cup
ghee 4 tblsp
khoya 1/4 cup
milk 2 cups
Preheat oven 350 degrees fahrenheit.
Heat ghee in a pan, add cashews and raisins.
Cook till raisins puff up, add the grated doodhi and carrot.
Fry for 5 mins in ghee.
Add milk and let cook till milk evaporates.
Add sugar, khoya and mix well.
Cook till the khoya melts.
Transfer the halwa into a baking dish.
Bake it in the preheated oven for 15-20 mins till the top layer is slightly brown.
Let cool and serve..
Alternate Method using Instant Pot
Set the instant pot to sauté mode.
Add ghee, grated carrots, doodhi.
Cover a glass lid and cook for 2-3 mins.
Pour in the milk and mix.
Change the setting to manual mode, cover the instant pot lid.
Set the time to 5 mins, with sealing position.
Do a quick release after the timer goes off.
Stir in the sugar and khoya.
Cook for another 5-8 mins till the liquid evaporates.
Turn off the instant pot.
Serve the halwa topped with ghee roasted nuts.
