Minestrone Soup

Friday nite is all about relaxing and having great food followed by a movie in my family :). Italian food is something we cherish.. This week it was Bruschetta and Minestrone Soup for dinner. This soup recipe has lot of ingredients, but very simple to make. All you to do is add in all the ingredients to a pot, let it cook and viola its ready to savor..

Ingredients

olive oil 2 tblsp
onions 1/2 cup chopped
zucchini 1 cut into thin slices
frozen green beans 1/4 cup
garlic 2 cloves minced
vegetable broth 4 cups
red kidney beans drained 1 can (15oz)
cannellini beans drained 1 can (15oz)
diced tomatoes 1 can (14oz)
carrots, julienned or shredded 1/2 cup
hot water 2 cups
fresh baby spinach 2 cups
small shell or other pasta 1/3 cup (uncooked)
salt 1 1/2 tsp

Spices
dried parsley 1 tsp
dried oregano 1 tsp
ground black pepper 1/2 tsp
dried basil 1/2 tsp
dried thyme 1/4 tsp

Method

Heat olive oil in a pan, then add onion, garlic, green beans, zucchini.
Let cook till onion is cook to look translucent.
Now add the spices, hot water, veggie broth, carrots, salt, canned diced tomatoes, and drained (red kidney and cannellini) beans.
Let it come to a boil, reduce flame and simmer for 15 mins.
Add spinach and pasta, and cook for another 10 mins.
Serve hot.
