Last week was an eventful week, with preparations for the varamahalakshmi festival. It is one the festivals I love to celebrate with lot of decorations and elaborate food. We celebrate by inviting all my dear family and friends for dinner. During my childhood, my mom always invited family over during all the festivals. We celebrated as one big family.. One of the curries I made was using soy beans.. This mild ginger flavored curry was a hit, loved by all my guests.. It is very simple curry that can be relished by everyone..
Ingredients
frozen edamame (soy beans) 3 packets
ginger 3 tblsp chopped
red chillies 8
coconut powder 8 tbsp
sambar powder 2 tsp
salt to taste
lime juice 5 tsp
sugar 1 tsp
for seasoning
ghee 1 tsp
oil 3 tsp
mustard seeds 1 tsp
urdhal 1 tsp
curry leaves 10
Method
Grind coconut, red chillies and ginger without adding any water.
Cook edamame in water for 5-8 mins in the microwave or on stove top till it is tender.
Heat ghee with oil in a pan, add mustard seed and let splutter.
Add curry leaves and urdhal, cook till the dhal is light brown in color.
Mix in edamame, sprinkle salt and sambar powder, lime juice and sugar.
Add the ground powder and mix well.
Continue to heat for 2-4 mins.
Edamame curry is now ready to serve.
Enjoy this with hot rice or as a side dish for roti or a filling for masala dosa (instead of the potato curry).
