Fuss free, easy to make, healthy lunch for kids..


whole wheat tortilla - 4
bell pepper - 1 sliced lenghtwise
onion - 1 thinly sliced 
salt and pepper per taste
kale - 1 cup chopped
carrot - 1/2 cup shredded
shreded pepper jack cheese - 1 cup
shedded low fat mozarella cheese  - 1/2 cup 
Oil/butter for cooking


In a pan add lil oil/butter, bell pepper, onion, carrot, kale, salt and pepper. 
Let cook for 3-5 mins so that veggies still have a crunchy bite.
Heat a griddle, spread some butter/oil and place a tortilla.
Layer the cheese, stir fried veggies, and another tortilla to cover it.
Let cook for 1-2 mins till cheese melts and glues all the contents.
Flip and cook on the other side for another 2 mins till golden brown.
Slice them and serve..
