Ragada Patties / Mumbai Style Ragada Patties/Ragada with Raw Banana Patties

In India chaat is a very popular street food. Each region has their unique way of serving chaat. Ragada patties is one of my favorite variety of chaat/street food. This Mumbai style Ragada patties is simple yet very flavorful. Ragada, a simple peas gravy forms the base of this chaat. Over the gravy, the beautifully shallow fried/toasted patties are placed, garnished with spices, green chutney, dates chutney, finely chopped onion, tomato, coriander leaves and thin sev. The chutneys, spice powder along with a piece of patty and the Ragada (green peas gravy) is a party in the mouth. I have tried the below recipe with both potato and raw banana to make the patty. Loved the taste with raw banana.

for patties
raw banana 4 boiled & grated
salt to taste
garlic pods 6
green chili 3
bread slice 1, remove edge

for ragada
dried green peas 1 1/2 cups
salt to taste
turmeric 1/4 tsp
water 1/2 cup – 1 cup

for green chutney
ginger 1/2 inch
green chili 1
roasted peanuts 2 tsp
coriander leaves 1 cup
mint leaves 1/4 cup
ice cubes 2
salt to taste
cold water 1/4 cup

for assembling Ragada Patties
green chutney 4 tbsp
dates chutney 4 tbsp
red chili powder 1 tsp
onion finely chopped 1/2 cup
tomato finely chopped 1/2 cup
cumin powder 2 tsp
chaat masala powder 2 tsp
coriander leaves finely chopped 2 tbsp
thin sev 1/2 cups


for green chutney
Grind all of the ingredients for green chutney together till to a fine paste.
Transfer the chutney to a bowl and thin it down slightly by adding 1/4 – 1/2 cup water.
Note: use ice to retain the lush green color of the chutney.

for ragada
Soak the dried green peas in boiling hot water for 3-4 hrs (or in room temperature water for 8 hours).
Cook till the peas are soft and set aside.
In a pan pour the cooked peas along with the water it was cooked in.
Using a potato masher slightly mash the cooked peas to give it a gravy consistency.
Add some extra water as needed. (Note: make sure the consistency is not too thick or too thin) Add turmeric and salt to taste.
Bring it to a boil and cook for 2-4 mins and turn of the stove.

for patties
Grind bread, green chili and garlic into a paste with out adding water.
In a bowl add grated raw banana, salt, bread-garlic-green chili paste.
Mix everything well and keep aside for 5-10 minutes.
After resting the mixture, divide it into 10-12 portions and make round patty.
Heat oil in a pan and shallow fry on both sides until golden brown.
Remove the cooked patties and set aside.

for assembling Ragda Patties
On a serving plate add warm ragada, 1-2 tsp of green chutney, 1 tsp dates chutney and then place the patties on it.
Sprinkle some red chili powder, cumin powder, chaat masala, chopped onion, tomatoes, green chutney and dates chutney.(Note: all the chutney and spice powder can be added as per taste. Can use store bought green chutney and dates chutney as well)
Garnish it with some coriander leaves and thin sev.
Serve immediately.
