Hariyali Paneer Tikka – Paneer cubes tossed in an array of Indian spices, herb chutney, oil and yogurt, let to soak in the spices for sometime to infuse all the flavors The infused paneer cubes are cooked on a grill for the aromatic smokey flavor. Marinated paneer is a fantastic option for an appetizer or as a stuffing in wraps. My kids are fond of paneer dishes, this is one of their most fav stuffing for wraps. This recipe is so simple, we make it for dinner on week nights. I would love it if paneer can be cooked on the grill, which we do during the warm days. During the cold evenings I follow a simple method of cooking it on the stove top, also sauté some bell peppers and onions on the side to add in the wraps along with the paneer. This is such an easy way to make tasty paneer wraps in 30 mins using store bought naan/tortilla once the paneer is marinated.
Ingredients
for the green paste
coriander with the stem 1 cup
mint 10 leaves
green chili 4
garlic 4 pods
to marinate paneer
dhaniya powder 1 tsp
jeera powder 1 tsp
garam masala 1 tsp
red chili powder 1 tsp
amchur 1/2 tsp
besan 2 tsp
thick curds 1/4 cup
paneer cubes 2 cups
ginger paste 1 tsp
turmeric powder 1/4 tsp
kasoori methi 1 tsp
oil 3 tsp + 4 tsp
salt to taste
for the wrap
naan/roti/tortilla 6
dates chutney 1/2 cup
green chutney 1/2 cup
bell pepper 1 cup, sliced into strips
onion 1 cup, cut into long strips

Method
For the green paste: Grind 1 cup coriander leaves with the stem , 10 mint leaves, 4 green chili, 4 garlic pods with very lil water into a paste.
Marinate the paneer: In a bowl add 2 cups paneer cubes, the green paste, 1 tsp each (dhaniya powder, jeera powder, garam masala, red chili powder, kasoori methi) 1/2 tsp amchur, 2 tsp besan, 1/4 cup thick curds, 1 tsp ginger paste, 3 tsp oil and salt to taste.
Mix well and let it marinate for 30 mins.
Cooking the paneer: Heat 2 tsp oil in a pan, add the marinated paneer and cook on low flame till all the liquid is evaporated. Avoid stirring, to keep the paneer cubes intact.
Sauté onion and bell pepper using 2 tsp of oil and set it aside.
Note: the marinated can be cooked on the grill as well
Assembling the wrap
Heat naan/roti/tortilla, spread some dates chutney (can use mint chutney also for more spice), place few cubes of the hariyali paneer, sautéed onions and bell peppers.
Wrap it and enjoy.
