Gulab Jamun Cake

Happy 2021! Last year was a year of many mixed feelings with the start of the pandemic, starting the new year on a sweet note. A dessert created using 2 of my favorite desserts – Gulab Jamun and cake. This cake is super soft and moist as it is soaked in gulab jamun syrup that adds a great flavoring to the cake. Its a party with flavors and texture as you bite through the slice of the cake with layers of gulab jamun pieces, soft cake soaked in syrup and the whipped cream that has a hint of saffron. Now I must tell you that this cake was created using the most easy recipe for base cake – the hot milk cake. My lil one loves baking and he made this cake recently, it was a super hit at my dinner table.

Ingredients and Method for the cake
Bake 2 cakes following the recipe for hot milk cake. Let it cool completely.

Ingredients to assemble the cake
gulab jamun 8-10 pieces or can use more (have used MTR canned gulab jamun)
sugar syrup from gulab jamun 3/4 cup – 1 cup
crushed pistachio 1/4 cup

for whipped cream
heavy whipping cream 2 cups
powdered sugar 3 tbsp
saffron strands 1/8 tsp or as per taste

Method to assemble the cake

for whipped cream
Whip the heavy whipping cream with the sugar and saffron for about 3 – 4 mins on high speed, till creamy and the soft spikes hold up. Set aside.

Drizzle gulab jamun syrup on both the cooled hot milk cake till moist.
On the first sponge, spread a layer of the whipped cream over the cake and then spread the gulab jamun slices.
Place the second sponge cake carefully over the gulab jamun pieces to create a layer and cover the cake with saffron flavored whipped cream.
Garnish with more gulab jamun pieces and crushed pistachio, chill and serve.
