Tomato Toast – Iyengar bakery style

A simple bread toast that is very popular in the local bakeries in Bangalore. The Iyengar bakery in Jayanagar is our favorite stop. The fresh soft bread is toasted with the delicate tomato spread. Green chillies are chopped finely and added to the tomato spread, which gives a sharp taste of spice in a few bites of the bread. The onion and carrot add the sweetness and the tomatoes give the tangy taste to it. This toast has a good mix of spice, sweet and tang. This is great option for evening snack with chai.

Ingredients

bread 20 slices
butter 2 tbsp
oil 3 tsp
mustard seeds 1/2 tsp
onion 1 cup finely chopped
carrot(grated) 1/2 cup
tomato 1 1/2 cups finely chopped
green chili 1, finely chopped
turmeric 1/2 tsp
red chili powder 3/4 tsp
garam masala 1/2 tsp
chaat masala 1/4 tsp
salt 3/4 tsp
coriander 2 tsp, finely chopped

Method

making the tomato masala
Heat a pan with oil and splutter mustard and cumin seeds .
Add chopped curry leaves , finely chopped green chilli and onion . Sauté till onions are translucent .
Add grated carrot and sauté 1-2 mins.
Add chopped tomatoes and sauté for 2-3 mins .
Mix in turmeric powder, chili powder and add around 1-2 tbsp water.
Cover the pan and let cook for 2-3 mins or till tomatoes are mushy.
Remove the lid, add garam masala powder, chaat masala, coriander leaves and salt.
Mix well and continue to cook till moisture is almost gone.

making the toast and serving
Heat a pan and reduce the flame to low, apply lil butter on both sides of the bread slice.
Place the bread on the heated pan.
Spread 1 tsp of the tomato masala on the bread slice, toast it on low flame till the bread gets crisp on the bottom.
Move the crisped bread to a cooling rack, slice it in half diagonally and it is ready to serve.
