Mexican Pizza

Mexican pizza is a favorite for my kids in Taco Bell. We have been to Taco Bell so many times and watched them make this pizza, we really wanted to try making this at home. Its super easy and needs few ingredients. One evening we decided to make it, so bought the ingredients and tried to replicate the Taco Bell style vegetarian Mexican Pizza. This is a very filling dish with beans, enchilada sauce stuffed in tostada and topped with cheese. The homemade Mexican pizza tasted very close to what we ate at Taco Bell. I make this for dinner with Black Bean Soup or for a quick snack before the evening games for the kids. Sure to satisfy the palate for every kid. The amount of enchilada sauce used can be reduced for less spicy taste.


Tostada 8 (used the store bought mini tostadas)
black beans 1 can, drained
taco seasoning 1 tsp
water 1 cup
cheddar cheese 1 cup
mexican blend cheese 1 cup
tomato 1, diced into small pieces
green onion 1/2 cup
enchilada sauce 1 cup


for mashed beans
Take the drained canned black beans in a pan, mash it with a spoon or a potato masher till smooth.
Mix in the taco seasoning and water.
Stir till all combined well.
Cook this on medium flame till it is in a semi liquid state (takes about 10 mins)

assembling and baking
Preheat the oven to 400 deg F.
On a oven proof tray spread the parchment paper.
Place a tostada, spread 1/2 tbsp (or as per taste) enchilada sauce, add a tbsp of mashed beans, cover with another tostada. On the top layered tostada, spread 1 tbsp of enchilada sauce, few tomato pieces, few green onions and finally spread 1/4 cup of cheese.
Repeat the above step for the rest of tostadas.
Bake this in the oven for 8-10 mins or till the cheese melts.
Enjoy the warm crunchy Mexican pizza.

Note: another variant for the stuffing/sauce in the Mexican pizza – mix corn with taco seasoning and lil salt, use this instead of the black beans in between the tostadas. Use tomatillo salsa instead of the enchilada sauce.
