Sorting breakfast every morning is one of my biggest chores. Slicing the bread, deciding what type of spread and other toppings. I always wondered if there was a solution to this issue. Yes! I found it, pull apart bread which is flavored. All I need to do is put out the loaf of bread on the counter. Breakfast is ready to be devoured :).
The pull apart bread can be served as is or can be slightly toasted. I always like my bread toasted. Any kind of flavoring can be added to this pull apart bread. For the flavoring of this bread, I use turmeric-herb, pesto sauce, marinara sauce, garlic and cheese. The soft and airy bread tastes great with a cup of tea or coffee.
Ingredients
water 1 1/2 cups
rapid rise yeast 1 tsp (aka instant yeast)
fine rava/semolina 1 1/2 cups
whole wheat flour 2 cups
sugar 2 tbsp
olive oil 1/4 cup + 2 tsp
salt 1 1/2 tsp
for herb mixture
garlic powder/ minced garlic 1 tsp
red chili flakes/green chili finely chopped 1 1/2 tsp
salt 1/2 tsp (adjust as per taste)
butter 4 tbsp, at room temperature
coriander leaves 1/2 cup, finely chopped
mint leaves 1/2 cup, finely chopped
green onion 4 stick, finely chopped
cumin powder 1/2 tsp
turmeric powder 1/2 tsp
Method
Put the yeast, sugar, olive oil, whole wheat flour, fine rava/semolina and salt in large bowl.
Warm the water in microwave for 50 secs (or less to make it lukewarm) and add that to the flour mixture.
Stir with a rubber spatula just until a rough dough forms.
Let the dough sit for 5 mins.
Knead the dough for 10-12 mins (or until it is very smooth, shiny, and elastic) using a stand mixer or by hand.
Transfer the dough to a lightly oiled container, smear it with 2 tsp of olive oil and cover with a plastic wrap or clean kitchen towel.
Keep the dough in a warm place for it to double in size.
Note: I keep it inside the oven with light turned on, it doubles in 60-80 mins when its cold weather. In warm weather takes less than 60 mins.
Mix all the ingredients under “the herb mixture” section and set aside.
Grease a loaf pan with oil. (I used 9X5 pan.) or line it with parchment paper.
Lightly dust the counter with flour.
Transfer the dough, knead for 2-3 mins and roll the dough into a rectangular shape.
Using a spoon spread the herb mixture.
Slice the dough into 5 strips from top to bottom – lengthwise, make sure the width of these strips is less than that of width of the loaf pan used for baking.
Stack the 5 strips, cut them into 5 sets of squares.
Place each of the square sets into the loaf pan with the cut side down, pressing them together.
Let the dough rise for another 40 mins in a warm place.
Preheat oven to 385 deg F.
Place the loaf on the middle rack of the oven and bake for 25-30 mins or until the crust is a deep golden brown.
Remove loaf from pan.
Let the bread cool completely on a cooling rack before serving.

Yes it is a very soft bread, great as a snack with chai or coffee. We normally have it for breakfast as it is easy to grab and go .. Thanks Nisha

Thanks Gari. Rapid rise yeast is instant yeast. I have used Fleischmann’s Rapid Rise Yeast.
