Dinners like this are so fun to serve and make. I had a box of tofu in the refrigerator which needed to be used up. I asked my lil one what to make for dinner and he says – pizza or taco/burrito. I took his second option. Now I had to cook the tofu in such a way that none of them can figure out it is tofu, as they are all not a big fan of tofu. Came up with the recipe below and the tofu turned out very tasty. This was layered into the many other fillings – guacamole, pico de gallo, Mexican cheese blend, corn bell pepper fajitas, and yogurt sauce on the warm tortillas. Before wrapping up the burrito I also sprinkled a few crumbled pieces of the flax seed tortilla chips (not in pic)for crunch.. it was the best burrito loaded with veggies 😊.
For the burrito
flax seed chips 1 cup (optional)
For the Filling
firm tofu 1 (14oz) package, cut into chunks
sauce for tofu
peanut butter 2 tbsp
sriracha sauce 1 tsp
red chilly powder 1/2 tsp or more as required
lemon juice 1 tsp
sesame oil 2 tbsp
pepper powder 1/4 tsp
jeera powder 1 tsp
salt to taste
Mix all the ingredients under sauce for tofu.
Toss the tofu pieces in the sauce and sautéed on low flame.
Mix all the ingredients below
Greek yogurt 1/2 cup
jeera powder 1/4 tsp
sugar a pinch
salt to taste
Sauté sliced bell peppers 2 cups , corn 1 cup, in 1 tsp of oil. Sprinkle jeera powder 1/2 tsp, pepper powder 1/4 tsp, salt a pinch.
–pico de gallo
onion 1, finely cut
tomato 1 1/2, finely cut
jalapeño 1/2 piece, finely chopped
salt as per taste
Mix all the ingredients and set aside.
Scoop 2 avocados into a bowl.
Mash it using a spoon, add 1/4 tsp jeera powder, 1/2 tsp pepper powder, 1/2 tsp lemon juice and salt to taste.
Mix them all together.
Method – for assembling the burrito
Warm the store bought tortilla.
Spread a small amount of the filling and enjoy.
