Anjeer and Nuts is a heavenly combination in sweets. Sweet shops in India sell a lot of these during Diwali. Remembering those rich burfi I wanted to make something light and healthy. In this recipe I have used no sugar, sweetness comes from the dates and anjeer. These will definitely satisfy the sweet cravings and works as a great option for lunch box snacks.
Ingredients
dried figs 1 cup finely chopped
pitted dates 1 cup finely chopped
almonds 1 cup
cashews 1/2 cup
pistachios 1/2 cup
cardamom 1 pod
ghee/ clarified butter 1 tbsp
Method
Dry roast the almonds and cashew in a pan, let it cool.
Grind the roasted almonds, roasted cashews, pistachios and cardamom with skin into a coarse powder.
Set aside 3 tsp of the ground nuts.
Line rectangular tray with parchment paper and keep it aside.
Heat ghee in a pan.
Add chopped figs, cook for 5 minutes on low-medium flame with constant stirring.
Add chopped dates, cook for another 3-4 mins till they become soft.
Transfer the contents into a jar and grind into a coarse paste.
Take the coarsely ground mixture in a bowl and add the ground nuts.
Mix it well.
Spread the mixture into the tray, sprinkle the set aside 3 tsp of the nuts.
Cover it with plastic wrap and refrigerate for 4-6 hours before slicing them.
Slice and save in a airtight container for up to a week.

I am always up for a healthy Indian sweet! This recipe uses only 1 tablespoon of ghee and lots of other healthy stuff..It’s perfect for snacking in winters!!

This is one of my favourite sweet treats. It tastes great, and is still healthy. I always buy it from Anand Sweets, though – should try making it at home myself. 🙂
