Tofu is a good source of protein. This gluten free dish can be served as an appetizer or as salad. With summer around the corner, need to make some healthy, tasty and light dinners. This one qualifies perfectly for the summer dinner. Kids will enjoy eating this dish and making them as well. During summer I love to make dinners that will involve the kids in the cooking. They have so much free time on hand, this will keep them excited and busy :).
carrots 2, sliced thinly
black bean sauce 2 tbsp
ginger garlic paste 1 tsp
firm tofu 250 gms, cut into cubes
lettuce leaves 8
cornstarch 1 tsp
sliced green onions, peanuts and sesame seeds for topping
chilli paste 2 tbsp
rice vinegar 1 tbsp
soy sauce 1 tbsp
sugar 1 tbsp
black pepper powder 1 tsp
making mapo tofu
In a bowl, whisk together all the ingredients for sauce and set aside.
Heat a wok and add oil.
Add the carrots and stir fry for a couple of minutes till they are slightly crisp.
Add the ginger garlic paste and stir fry for another minute.
Pour the sauce in and cook the sauce for 2-3 minutes.
Add the black bean sauce and tofu and simmer for a minute or two.
Whisk cornstarch in 1/4 cup water and add to the wok.
Mix gently and bring it to a boil.
to assemble lettuce wraps
Add two to three tablespoons mapo tofu to each lettuce leaf and top with green onions, sesame seeds and roasted peanuts.
