Mango Salsa

Mango’s are in season now. Mostly we get to see mango all round the year here in US. But this time of the year there are few more varieties, but nothing compared to what we get in India. We all rave for mango and make variety of sweet dishes with mango. Today wanted to use up the stock I had and also wanted to eat a savory mango dish.
These days we are following a routine of eating healthy dinner, today happens to be the day for soup. I did not have many veggies in the fridge. Hence decide to make a super healthy lentil soup and my munchkin’s were unhappy. To keep them happy decided to make some mango salsa, as both of them love Mexican food. Served these with tortilla chips on the side. This really did make them happy :)..
This salsa can be used as a stuffing in tortilla scoops, tacos or burritos.

Ingredients

ripe mango 1 large, diced
red bell pepper 1, chopped
red onion 1/4 cup, chopped
fresh cilantro leaves 3 tsp, chopped
jalapeño 1, seeded and minced
lemon juice 1 tsp
salt to taste

Method

Combine the mango, red bell pepper, onion, cilantro and jalapeño in a large bowl.
Drizzle the lemon juice and mix well.
Sprinkle the salt and taste to adjust the seasoning. Add more salt as needed. Let the salsa rest for at-least 10 minutes before serving.
