Lettuce Tacos

Today is the first day of spring, everything starts to get and feel better.  Weather gets warmer, plants become colorful, birds are out there chirping. Also, heard on radio this morning, that today is the “international day of happiness”. Was not aware of this day at all. Apparently, it is the day of happiness which is being celebrated since 2013. So, here is what I think
spring = happiness
happiness = eating something healthy and tasty
Therefore we can deduce that “spring calls for healthy eating”.
We have a lil bit of math (transitive property to be more precise 🙂 ) going on here .. hehe.. effect of working with my lil on his math problems.
Here is my healthy and tasty salad, served in a creative way which the kids really enjoy. My kids love this one and they are ok to eat this even on a cold winter day.

Ingredients

for roasted sweet potatoes
sweets potatoes 3, cut into small chunks
olive oil 2-3 tbsp
salt to taste
pepper to taste

for beans
black beans 1 can
oil 1 tsp
garlic 1 pod, crushed
salt to taste
cumin powder 1/2 tsp
red chilli powder 1/2 tsp

for guacamole
avocado 2
garlic 1 pod, minced
salt & pepper per taste
lemon juice 1 tsp
cumin powder 1/2 tsp

for pico de gallo
onion 1 medium, finely chopped
tomato 2, chop into small chunks (scoop out flesh of tomato, before cutting)
jalapeno 1, deseeded and finely chopped
cilantro 1/4 cup, chopped
salt to taste

Method

for roasted sweet potatoes
Drizzle some olive oil on sweet potato chunks, season with salt and pepper.
Bake in the preheated oven at 425 deg for 15 mins.

for beans
Drain and rinse a can of black beans.
Heat this in a pan with 1 tsp oil.
Add crushed garlic, drained black beans, salt, cumin powder, and red chilly powder.
Mix well and cook for 2-3 mins.

for guacamole
Mash avocado after removing the seed and the skin.
Mix in minced garlic, lemon juice, pinch of cumin powder, pepper, and salt.

for pico de Gallo
In a bowl mix finely chopped onion, tomato, jalapeño, cilantro, and salt.

for serving
Wash the romaine heart lettuce in water and use them as shells for the taco.
In a romaine heart lettuce, add a few roasted sweet potatoes, black beans, gaucamole and pico de gallo.
Ready to serve..
