Egg & Veggie Salad with Chipotle dressing

A very simple yet colorful and nutritious taco salad with homemade chipotle dressing..Salad has a bed of lettuce topped with diced 🥑, 🍅, sweet peppers, black eyed beans and corn sautéed in cumin powder, thinly sliced onion, sliced boiled eggs, sprinkle of finely chopped green onions and some tortilla chips for the crunch! This salad is loaded with protein and has tons of veggies. A very adaptable salad that can be made with what ever veggies you have on hand, just make sure to include the protein. This is somewhat like a burrito bowl, you could include the cilantro rice as well, but we loved it without the rice..

Ingredients

for salad
sweet peppers 1 1/2 cup, diced
red onion 1, thinly sliced
cooked beans (black eye beans or black beans) 1 cup
sweet corn 1/2 cup
eggs 4, boiled and shelled
roma tomatoes 1 cup, diced
avocado 2 large, diced
tortilla chips few
lettuce 2 cups, chopped (I used iceberg lettuce)
green onion 1/2 cup, finely chopped
oil 1 tsp
cumin powder 1 tsp
salt to taste

for chipotle dressing
ranch 2 tbsp
mayonisse 1/4 cup
greek yogurt 3/4 cup
red chilli powder 3/4 tsp
dried oregano 1/3 tsp
cumin powder 1 tsp or lil more (if you like smoky flavor)
garlic powder 1/2 tsp
sugar 1/4 tsp
lemon juice 1 tbsp
salt and pepper as per taste

Method

for salad
In a skillet heat 1 tsp oil, add the cooked beans and corn. Sauté it for 2-3 mins, then sprinkle the cumin powder and salt. Mix well and set aside.
Slice the eggs into thin rounds and set aside.

for chipotle dressing
mix all the ingredients and set aside.

assembling the salad
Assemble each serving bowl with bed of lettuce and top it with diced avocado, tomatoes, sliced egg, black eyed beans and corn sautéed in cumin powder, thinly sliced onion, diced sweet peppers.
Sprinkle it with finely chopped green onions and some tortilla chips for the crunch!
Drizzle the chipotle dressing and serve.
