Karachi Biscuits

Yeah 2017 is here! Wishing the best for the New Year.. This post is long due. Got so tied up with parties, travel and fun during the holidays, did not get to post this recipe.
Karachi biscuits/cookies are a very popular variety found in Hyderabad, India. These are super crunchy with a burst of sweetness due to the tutti frutti (raw papaya) pieces. Tutti frutti comes in red and green colors which are perfect Christmas colors. Hence decided to bake these cookies during the holidays.
Every year my daughter loves to share cookies with friends and her school teachers. We ended up making several batches of these cookies during the holiday season.. These are great to be served with tea or even dunk in milk.

Ingredients

wheat flour 1/2 cup
all purpose flour 1 cup
custard powder 4 tbsp (I used vanilla custard powder)
salt a pinch
milk powder 1 tbsp
cardamom powder 1/4 tsp
unsalted butter 1/2 cup @ room temperature
sugar 1/2 cup
milk or pineapple juice 4 tbsp
tutti frutti 1/2 cup

Method
Preheat oven to 350 F degrees. Line 2 baking trays with parchment paper and set aside.
In a bowl mix together flour, custard powder, milk powder,salt and cardamom powder. Set aside.
Using the paddle attachment of your stand mixer or using your hand mixer, beat butter and powdered sugar till creamy and smooth.
Add milk and mix till well combined. (note: instead of just milk, you could use a combination of milk and pineapple juice)
Add in the flour mixture and mix will till combined.
Mix in the tutti frutti.
Mix everything together to form a dough. (note: You may add more milk if the dough isn’t coming together)
Divide the dough into 2 equal parts and make logs out of it.
Wrap the logs with a cling sheet tightly and refrigerate for at least 3 hours.
Take out the dough logs after they have chilled and cut into 1/4 inch thick rounds.
Place cookies on the prepared baking trays lined with parchment paper.
Bake the cookies at 350 F degrees for 16-18 minutes.
Remove from oven and let them cool completely.
Store karachi biscuits in an airtight container and enjoy with your chai!
