Paste di Mandorla (Almond Cookies)

Paste di Mandorla is a popular almond cookie in Sicily. These are also known as baked Marzipan. The recipe is super simple but ends up as these pretty and tasty cookies. Hint of lemon zest in these cookies elevates the taste to a new level, Yummm !!!:).. Its holiday season now, its the season for sharing sweet treats with teachers and friends. This is one of our new additions to the basket of treats:).

Ingredients

almond flour 1 cup
sugar 1/2 cup
large egg white 1 (don’t beat it)
lemon zest 1/2 – 3/4 tsp
vanilla extract 2 tsp
honey 1 tsp
Powdered sugar to roll

Method

Mix all ingredients except powdered sugar into a dough with your hands, spoon or mixer.
Chill in fridge for an hour.
Preheat oven at 350 degrees F.
Divide into 12 balls, roll lightly in powdered sugar.
Place them on parchment-lined cookie sheet.
Bake for 15 mins.
Cool for a few minutes on cookie sheet and transfer to a cooling rack.
Enjoy cookies with tea or coffee!!

  1. Thank you so much for the recipe mam… I tried this and came out well but it’s very soft.. is this cookie texture is very soft or I got it like this.. confused with texture, please let me know..
