Cinnamon cookies are very buttery, crunchy cookies, that are made with no baking powder. These can be made easily and they disappear so fast :). For the last few years it has become a tradition to bake many varieties of cookies for the holiday parties we have at home. This is one the favorites I make.
Ingredients
all purpose flour 1 cup
corn starch/flour 2 tbsp
butter 1/2 cup (@room temperature)
sugar 1/3 cup
vanilla essence 1 tbsp
cinnamon powder 1 tbsp
milk 2 tbsp (@room temperature)
Method
Preheat the oven to 350 deg F.
In a large bowl, sieve the all purpose flour, corn starch and the cinnamon powder.
In another bowl, cream the butter, vanilla essence, and sugar until light and pale.
Add the dry ingredients to the butter mixture and mix well.
Add milk to the above mixture to lighten it up. Should resemble thick but a smooth frosting.
Transfer the contents to a piping bag with the star/swirl nozzle fixed to it.
Pipe the cookies on a sil-pad or parchment paper.
Bake them for 10-12 mins or until slightly golden.
Let them cool on a wire rack completely.
