Shankarpali

Shankarpali is popularly known as the diamond sweet in my family. Last few years it has become a tradition for us to make these for Diwali. This year ended up making the savory version of it as well,using kasoori methi. It is so easy, yummy and fun to make. During festivals both my kids love to help me in cooking and decorating around the house. This time around kids helped me with cutting out shapes :).

Sweet version

Ingredients

all purpose flour 1 cup
fine rava 2 tbsp
powder sugar 1/4 cup
ghee 5 tsp
water 1/4 cup
oil for deep frying

Method

Mix all the ingredients except oil in a bowl to make a stiff dough.
Let it rest for 10 mins.
Divide the dough into 3 parts.
Roll each part into slightly thick circles.
Using a knife cut them into small diamond shaped pieces.
Heat oil and deep fry the diamond pieces till golden brown.
Drain on a paper towel and store in air tight container.
Note: You sprinkle some sugar on the fried shankarpali right after taking it out of oil.This is optional.

Methi Shankarpali (savory version)

Ingredients

wheat flour 1/2 cup
all purpose flour 1/2 cup
fine rava 2 tbsp
red chilly powder 1/2 tsp
kasoori methi 1 tbsp
salt 1/2 tsp or as per taste
ghee 5 tsp
water 1/4 cup + 2 tbsp
oil for deep frying

Method

Mix all the ingredients except oil in a bowl to make a stiff dough.
Let it rest for 10 mins.
Divide the dough into 3 parts.
Roll each part into slightly thick circles.
Using a knife cut them into small diamond shaped pieces.
Heat oil and deep fry the diamond pieces till golden brown.
Drain on a paper towel and store in air tight container.
