Lazy Daisy Cake

Two things caught my attention when I came across this recipe – the name and then the luscious caramelized coconut topping. Got curious and researched online to see why the name “Lazy Daisy”. So for the word “lazy” in the name folks said that it is an easy cake to whip up which is great for the lazy summer days. But not sure why daisy, doesn’t look like the flower. Hey but I like it, as “lazy” and “daisy” rhymes :). I totally enjoyed baking this cake which is said to have originated in the 1940’s. It cooks quickly, was super soft, no need for any decoration, hence makes this a no-fuss cake. This simple yellow cake with a broiled coconut-butter-brown sugar topping is an all-time favorite at my home, we have so many coconut lovers (especially my hubby). The crunchy coconut topping on the cake tasted like coconut macaroons.

Ingredients

eggs 3
sugar ¾ cup
brown sugar 5 tbsp
vanilla extract 1½ tbsp
baking powder 1½ tsp
salt ⅓ tsp
milk ¾ cup
butter 3 tbsp cubed

for cake flour
all-purpose/multi-grain flour 1½ cup
corn starch 3 tbsp

for frosting
brown sugar 1 cup packed
butter ¾ cup melted
heavy cream / milk ¼ cup
flaked coconut 1½ cups

Method

for cake flour
Measure the flour into a mixing bowl and spoon out 3 tablespoon of the flour.
Add the corn starch and mix well.

for cake
Preheat the oven at 350 deg F.
Grease the baking pan.
In a large bowl, beat the eggs, sugar and vanilla until thick and pale yellow, about 4 minutes.
Combine the cake flour, baking powder and salt.
Add the flour mix to egg mixture, fold in with spatula and beat just until combined.
Microwave milk and butter for 40-50 sec, till the butter melts.
Add milk-butter mixture to the batter and beat until combined.
Note: the batter will be thin
Pour into a greased 13-in. x 9-in. baking pan.
Bake at 350° for 22-25 minutes or until a toothpick inserted near the center comes out clean.

for frosting
Combine frosting ingredients.
Let the cake cool for 5 mins and spread frosting over warm cake.
Broil 4 inches from heat until lightly browned, about 1-2 minutes.
