So agree with every word in the quote above :). Coconut Almond cookies are super crunchy, perfect to the bite, slightly sweet. These super crunchy cookies are eggless, simple to make, just mix the dough and bake. They go in the oven and come out smelling so good. Initially they were soft, but once they cooled down they turned crunchy. These cookies reminded me of the cookies I used to have as a kid. Can be a great treat for kids snack. Made a few changes to the recipe is adapted from Archana’s kitchen.
Ingredients
almond powder ¼ cup
all-purpose flour ¾ cup
unsweetened desiccated coconut ¼ cup
butter 3 tbsp (@ room temperature)
ghee 2 tsp
brown sugar ¾ cup
salt 1 pinch
baking soda ¼ tsp + 2 pinches
milk 3 tbsp
white granulated sugar 3 tsp
Method
Preheat the oven at 350 deg F.
Combine the butter, ghee and sugar in a bowl, mix well using a fork.
Mix in the unsweetened desiccated coconut and almond powder.
Now add the flour, baking soda, salt and milk.
Knead all the ingredients till a soft dough is formed.
Scoop small portions of the dough and place them 1 inch apart on a silicon baking mat or parchment paper.
Press the dough gently and sprinkle some white sugar granules on them.
Bake these cookies in the oven for 15 mins.
Remove and let them cool on a cooling rack.
Enjoy the crunchy coconut almond cookies with tea/coffee or just an snack anytime of the day.

Should work with wheat flour.. Do give it a try.. I haven’t tried this recipe with wheat flour but other cookies I do make it with wheat flour..
