Triple Chocolate Chip Cookies

It’s Friday, yeah!!! What can be a better surprise for the kids than snacking on the Triple Chocolate Chip cookies? 🙂 Haven’t met any kid who is not crazy for chocolates. Today has been really warm after all the rain and cold weather over the last few days. Today N & N came home saying they are very hot and want to make a trip to Coldstone to get some ice-cream. Once they saw these cookies they just settled to eat at home by making cookie-icecream sandwiches. They also enjoyed the cookies by dipping them in a cup of milk :). These cookies are loaded with chocolate. Watching TV and enjoying these chocolate loaded cookies is perfect for a Friday evening treat for my kids after school.

Ingredients

butter ¼ cup
oil 2 tbsp
sugar ¾ cup
water 3 tbsp
salt ¼ tsp
baking powder ½ tsp
all-purpose flour 1 cup
unsweetened cocoa powder ⅓ cup
white chocolate chips ¼ cup
semi-sweet dark chocolate chips ¼ cup

Method

Using a hand mixer in a large bowl cream butter, oil, sugar and 1 tablespoon water at a time until light and fluffy.
Mix in the remaining water and beat well.
Mix all the dry ingredients in a separate bowl.
Add dry ingredients to butter mixture and mix until combined.
Mix in the white and semi-sweet dark chocolate chips into the dough.
Refrigerate for 30-45 minutes or put in freezer for 10 mins to make the dough firm.
Preheat oven 400°F and grease a cookie sheet or use a silpat.
Make 24 balls and place on the cookie sheet 1 inch apart.
Bake for 10 minutes, should be very puffy.
Allow to cool for 5 minutes on baking sheet before serving.
