Making appetizers are always time consuming for me. I normally end up serving store bought stuff when I am having a large crowd. Veggie cheese toast is a simple recipe, easy to make for a crowd, kid-friendly, easy to serve….. All I can say is, this is one great appetizer..Can be customized with the veggies and cheese of your choice. Below combination was a great hit at my house. Learnt this from a good friend who made this for our New Year’s party. Recently when I made it, had all the ingredients ready and my kids helped assemble it. It was ready in no time. Given the cold weather here in California, this can make a great evening snack or even served as a side with soup for dinner.
olive oil 1/4 cup
onion 1 small
bell pepper green 1
corn 1/2 cup
green chilies 2-3 sliced thin
cilantro 1/4 cup
red chili powder 1/2 tsp or less as per taste
salt to taste
grated cheese 1 cup (used lite mexican blend)
Slice the baguette into 1-inch thick slices and set aside.
Cut the tomatoes, onion and green bell pepper into small pieces and transfer into a mixing bowl.
To the chopped veggies add the green chillies, salt, red chilly powder, cilantro and corn and mix well.
Place the baguette pieces in the baking tray.
On each of the baguette piece smear a drop of olive oil, put a tablespoon of the veggie mixture and cover with grated cheese liberally.
Preheat oven at 350 deg F.
Place the baguette pieces inside and bake them just till the cheese melts for about 6-8 mins.
Remove from the oven and serve warm.
Note: can use regular bread instead of baguette, just slice the bread slightly thick.
If making for the kids, omit the green chillies.
