Cannoli Cake

Cannoli cake is an extremely moist, airy cake soaked in condensed milk, and topped with the luscious, creamy cannoli cream. Have to try it to believe how yummy cannoli cake can be ! :). It is simply delicious !!
We like our cakes moderately sweet, reduced the proportions from the cannoli cream mixture listed in the recipe at Life Love and Sugar . This holiday season made it many times and was a great hit in all my parties. During Christmas made 2 layered cake and in between the layers added a layer of cannoli cream and topped the cake with the remaining cannoli cream. Topped with chocolate chips.

Ingredients

for cannoli cream topping
ricotta cheese 1 cup
mascarpone cheese 1 cup
sugar 1/2 cup + 3 tsp
condensed milk 1/4 cup
cinnamon powder 1 tsp
vanilla essence 1 tsp

for cake
all-purpose flour 1 1/2 cups
sugar 3/4 cup
baking soda 1 1/2 tsp
baking powder 3/4 tsp
salt 1/2 tsp
eggs large 2
water 3/4 cup
milk or cream 3/4 cup
vegetable oil 3 tbsp
vanilla extract 1 tsp
condensed milk 1/2 cup + 1/4 cup milk
chocolate shaving or chocolate chips 1/2 cup

Method

for cannoli cream topping
Beat the ricotta cheese, vanilla essence and mascarpone cheese until smooth in a mixer.
Add the sugar and cinnamon and mix well.
Add the condensed milk and mix till well combined.

for cake
Preheat oven to 350 degrees.
Line standard tray with liner and meat it with oil and set aside.
In a large bowl mix together cocoa powder, flour, salt, sugar, baking soda, baking powder.
Heat water and milk/cream together in microwave for 40 secs.
Add eggs, warm water & milk/cream mixture, oil, and vanilla.
Mix until smooth using a hand mixer for about 3 minutes.
Scrape down the sides and bottom of bowl so that the batter is well mixed.
Pour the batter in to the prepared pan.
Bake for 20 – 22 minutes until well done.
Transfer to a wire rack, let cool completely.
Using a straw poke, the cake to create holes all over.
Mix the 1/2 cup condensed milk and 1/4 cup milk well.
Pour condensed milk and milk mixture over the cake, so that it remains moist.
Let the cake set in refrigerator for 1 hr.
Spread the cannoli cream and let set for 3-4 hrs in refrigerator.
Sprinkle some chocolate shavings or chocolate chips.
