Strawberry Jam Cookies

Baked these simple and easy holiday cookies filled with fruit jam in the center for my kids to take as holiday treats for their school friends and teachers. Decided to make these cookies late in the night, it was so quick and turned out great. I have used strawberry jam to fill the cookies, that could be replaced with any type of fruit jam.

Ingredients

all-purpose flour/maida 1 1/2 cups
wheat flour 1/2 cup
baking powder 1/2 tsp
salt 1/8 tsp
brown sugar 3/4 cup
softened butter 1 stick or 1/2 cup
milk 1/3 cup
vanilla extract 1 tsp
powdered sugar for dusting
strawberry jam 1 cup

Method

Preheat the oven to 325 deg F and prepare the baking trays by lining them with silpads or parchment paper.
Mix the all-purpose flour, wheat flour, baking powder and salt in a bowl. Set the flour mixture aside.
Beat the sugar and butter until it’s light and fluffy in hand mixer or kitchen aid .
Gradually add the milk and vanilla until and continue to beat until combined.
Add the flour mixture and continue to mix till a dough is formed.
Roll the dough ball into 1/2 cm thick sheet on a floured surface with a rolling pin, covering the dough with wax paper or plastic wrap in order to prevent the dough from sticking to the rolling pin.
Cut the cookies into circles using a round cookie cutter.
Place them on the baking tray about an inch apart.
Using a pestle or any your finger make a small impressions in the center of the cookie circle to fill in the jam.
Use a small spoon to fill each  cave with a spot of store bought strawberry jam.
Bake for 12-15 minutes, until the dough is just slightly golden.
Let the cookies cool completely on a cooling rack.
Dust the powdered sugar on the cookies.
