Growing up in Bangalore, Karnataka we used to eat a lot of local bakery products. There is one thing I always bought when I went to the bakery was Potato stuffed buns (aka palya bun). Potato being my fav, anything made with potato was my fav :). Baking these beauties at home brings so much happiness and memories from the past.
My new KitchenAid stand mixer has made kneading the dough so easy, that has been encouraging to bake more and try out new recipes. Made these buns using olive oil and a combination of wheat flour plus all-purpose flour to make it little bit healthy.
Ingredients
for stuffing
potatoes 2 cups boiled and mashed roughly
onion 2 thinly sliced
green chillies 9 sliced long
oil 8 tsp
mustard seeds 1 tsp
turmeric powder 1/2 tsp
salt to taste
lime/lemon juice 1 tsp
garam masala 1/2 tsp
for buns
wheat flour 2 cups
all-purpose flour 2 cups
olive oil 4 tblsp
active dry yeast 2 1/4 tsp
salt 1 1/2 tsp
sugar 2 tsp
water 1 1/4 cup
Method
for stuffing
Heat oil in a pan.
Add mustard seeds and let splutter.
Add onions, green chillies, salt and sauté till onion turns pale pink.
Mix in the boiled and mashed potatoes, turmeric powder, lime/lemon juice and garam masala.
Set this aside for it to completely cool down.
for buns
1.proofing yeast
Microwave 1 1/4 cup of water for 40 seconds to make it luke warm.
Mix the yeast in warm water, along with sugar.
Keep the mixture inside the oven for 10 mins with the light on.
2.making dough
Mix the wheat flour, all-purpose flour, salt and olive oil.
Turn on the kitchenAid mix with the mixing hook in speed 2, let mix all the ingredients.
Slowly add the proofed yeast and the water and let mix the dough.
Once the dough comes together, change it to use the kneading hook and run on speed 2 for 6 mins
After the dough is kneaded, transfer to greased bowl.
Cover with wet paper towel and let it proof for an hour inside the oven with the light ON, so that the temperature is warm which enables the dough to double in size.
Note: the dough could be mixed in hand as well. If mixing in hand, the dough will have to kneaded for 10 mins.
Once the dough has doubled in size, punch it to remove air and knead for another 6-8 mins.
3.stuffing and baking
Preheat the oven at 400 deg F.
Make small balls and roll each ball.
Stuff about 2 tablespoon of the potato stuffing made earlier.
Start to gather the edges, so that the top can be covered to form a ball. Repeat for the rest of the dough.
Place the stuffed buns on a greased and floured baking tray.
Let proof for another 40 mins inside the oven with the light ON.
Bake the buns in the preheated oven for 15-18 mins or till golden brown.
Let the buns cool down completely on wire racks.
Note: the buns will be hard and sound hollow when removed from the oven, that’s ok, not to worry.
