Winter has kicked in and the weather here is really cold. Was looking for something to spicy and crunchy to munch. Came across a process of toasting peanuts in the microwave oven. Last week during Diwali made this recipe for the first time as it was very simple and quick to make. It complimented well for the weather and also for the occasion where we tend to eat a lot of sweets during Diwali :). It was such a hit given that it is easy, healthy and quick. Made it couple of times in a few days..
raw peanuts 1 cup
besan 2 tbsp
rice flour 1 tbsp
garlic 1 pod grated
red chilly powder 1/2 tblsp
turmeric powder 1/4 tsp
asafoetida a pinch
fennel powder 1/4 tsp
chaat masala powder 1/4 tsp
cumin powder 1/4 tsp
salt 1/2 tsp or as per taste
oil 1 tsp
curry leaves 10 chopped
Place the peanuts in a colander and wash it. Let water drain completely.
Mix all the flours, spice powders, garlic and salt.
Add the above flour mix to the rinsed peanuts.
Sprinkle a little water and mix everything well till all the peanuts are coated well with the flour mix.
Coat a microwave safe plate with few drops of oil and spread the masala coated peanuts.
Microwave on high power for 3 minutes, flipping the peanuts around after every minute.
Add few chopped curry leaves and microwave on high for one more minute.
The crunchy tasty peanuts are ready for munching :).
