For my love for Italian food, I keep on trying to learn new recipes and perfect them time to time. Alfredo sauce is one thing that I always stayed away from when ordering food in Italian restaurants thinking it will be too creamy and cannot eat it. All this changed after one day a friend came home and he made the sauce in front of me. It tasted great, would be wrong if I said not creamy, it was creamy but not as much as I had imagined it to be. Then onwards I always make the sauce at home. I added a tweak to the sauce by adding garlic to it after tasting it in Olive Garden resturant and all of us love the taste of this garlic flavored creamy sauce.
Ingredients
fettuccine pasta 1 pack
coriander finely chopped 1/2 cup
pepper powder 1/4 cup
garlic pods 15
olive oil 8 tsps
salt for pasta water
for sauce
butter 1/2 cup
heavy whipping cream 2 cups
salt 1/2 tsp
pepper 1/4 tsp
garlic 3 pods finely chopped
parmesan cheese 1/2 cup
Method
for sauce
Heat butter on low/medium flame in a deep pan.
Add garlic, pepper, salt and heavy whipping cream.
Let boil and simmer for 8 mins.
Mix in the parmesan cheese and turn off the flame.
for pasta
Boil a big pot of water, add salt and 3 tsp of olive oil.
Add the pasta and let cook as per package instructions.
Drain the water and set aside.
for roasted garlic
Heat 4 tsp of oil in a small pan.
Slice the garlic into thick pieces.
Add garlic and roasted it till light brown.
serving pasta
Place a big spoonful of pasta on a place.
Pour 2 spoons of the sauce.
Garnish with few pieces of roasted garlic and few coriander leaves.
Can sprinkle extra parmesan cheese and pepper powder as required..
