Blueberry Cobbler

Summer time we get many varieties of berries. Cobblers are a great way to introduce different berries to the kids. It has very mild sweet taste and very spongy texture. There are many ways of making cobbler, I personally like this way of making cobbler which is fruity and has cakey texture. These cobbler slices can be served with whipped cream or a dollop of ice cream as well.

Ingredients

butter 1 stick (1/2 cup)
sugar 1 cup + 2 tblsp sugar
all purpose flour 1 cup
baking powder 1 tsp
salt a pinch
milk 1 cup
blueberries 1 cup (frozen Or Fresh)

Method

Preheat the oven at 350 degrees Fahrenheit.
Pour 1 cup of sugar, baking powder, salt and flour into a mixing bowl and set aside.
Melt butter in a microwavable dish and whisk in the milk.
Add the flour and sugar mixture into the milk-butter mixture and mix well in one direction.
Apply butter to a 8 inch baking dish.
Note: Rinse and pat dry the blueberries, if using the fresh fruit
Pour the batter into the buttered baking dish.
Sprinkle blueberries over the top of the batter, distributing evenly.
Bake in the oven at 350 degrees for 50-60 mins, or until golden and bubbly.
Sprinkle additional 2 tablespoon of sugar over the cobbler 10 minutes before it’s done.
