Bagel Cheese Melt

Having lot of leftover bagels? Can’t eat them with cream cheese, try this.. My kids call this bagel pizza :). We were watch the NBA basketball game, in the weekend did not have dinner ready. Bagel cheese melts was a quick fix for dinner. It is was filling and I got to sneak in some veggies for the kids which they ate without any cribbing..

BagelCheeseMelt - bnpassion

Ingredients

bagel 4
fresh baby spinach 20 leaves
pepper jack cheese 4 slices
sweet basil pesto 1/2 cup
salt and pepper to taste
onion 1 thinly sliced rounds
tomato 1 sliced

Method

Turn on the oven and set it to Broil.
Slit the bagel into half.
Apply a thin layer of pesto (optional: we are pesto lovers, hence added this layer 🙂 )
Layer the 1 or 2 onion rounds, tomatoes.
Sprinkle some salt and pepper for taste.
Arrange 4 baby spinach leaves and top it with pepper jack cheese slice.
Slide it in the middle rack of the oven and let cook for 2-3 mins till the cheese melts.
Note: if you like your cheese to brown let sit for another 1-2 mins in the oven.
Bagel cheese melts are ready to serve..
