On a cold/lazy day, want to eat something sweet, but don’t want to make a detailed recipe. In this circumstance you can certainly pick this dessert that is slightly sweet and healthy. One might question – How can a dessert be healthy? Yes it can be, this is filled with fruits, nuts and oats. This recipe is very easy and quick. The top will be crisped nicely and the inside will be soft. My 11 year old daughter baked it today :)..
Ingredients
for filling
mixed fruit chunks (apple, peach, canned pineapple) 1 cup
pineapple juice 1/4 – 1/3 cup
custard powder/corn starch 1/2 tsp
cinnamon powder 1/2 tsp
for topping
all purpose flour 1/2 cup
old fashioned quick rolled oats 1/2 cup
chilled butter 6 tblsp
salt a pinch
pecans 10 chopped small
brown sugar 1/2 cup lightly packed
Method
Preheat the oven to 425 degrees F. Spray 4 ramekins with oil and set aside.
for the filling
Mix together the pineapple chunks, apples, peach, cinnamon, custard powder, and pineapple juice.
Divide the mixture equally between the ramekins.
for the topping
Combine the flour, oats, sugar, pecans, and salt in a large mixing bowl.
Cut the chilled butter into thin slices and add it the large mixing bowl.
Using a potato masher mix together until the butter is the size of peas.
Spoon the topping over the filling mixture.
Place the ramekins on a small baking sheet and bake until golden and the filling is bubbling for 18 minutes. Cool for 10 minutes and serve..
Note: Can also be served with a scoop of icecream..
