Peas Pulao

Peas pulao is my mom’s signature dish. It needs no grinding, has a very simple unexpected ingredient that adds so much flavor to the dish. Best when served with tomato-onion raita. This is one of the goto recipes for me when I am entertaining big crowds.

Ingredients

for pulao
rice 1 cup
peas 1/2 cup
oil 5 tsp
onion 1 sliced long
garlic 4 pods
cinnamon stick 1/2 inch
clove 1
mint leaves 1/2 cup
coriander leaves 1/2 cup
rasam powder 2 tsp
lime juice 1 tsp
milk 1 cup
water 1 1/2 cups
salt to taste

for raita
onion 1 small, finely chopped
tomato 1, finely cut
coriander 1/4 cup, finely chopped
yogurt 2 cups or more
green chilli paste a pinch
salt to taste

Method

for rice
Wash and soak rice in water for 20 mins.
Heat oil in a pan.
Add cinnamon, clove, garlic and onion.
Cook for 1-2 mins, then add mint leaves and coriander leaves.
Drain the water and add the rice to the pan.
Add salt, rasam powder and fry the rice till nice aroma.
Add milk and 1 1/2 cups of water, let come to a full boil.
Reduce flame and cook the rice on low flame for 10-12 mins or till rice is completely cooked.
Serve just the rice or with onion/tomato raita or boondi raita.

for raita
Mix all the ingredients for raita in a bowl.
Serve on the side with pulao.
