Quinoa Salad

Quinoa is a grain that is high in protein. This salad can be a filing weekday lunch. It has a good portion of vegetables, fiber and protien. Easy to make once we have all the veggies handy, by the time quinoa will cook we can get the salad dressing ready and mix the salad right after.

Ingredients

quinoa ½ cup
peanuts toasted ¼ cup or less
tomatoes ½ cup
onion chopped ½ cup
bell pepper chopped ½ cup
edamame ½ cup
avacado cut small pieces 1 – optional
blanched brocolli 1 cup
cucumber ½ cup
roasted corn ½ cup

for salad dressing

coriander ¼ cup chopped
lime juice ½ lime
soy sauce 1 tsp
salt to taste
pepper to taste
sugar 1 tsp
olive oil 3 tsp
green chilli paste 1/2 – 1 tsp (adjust as per taste)

Method

Cook quinoa as per package instructions.
Use a fork to fluff after cooking the quinoa.
Mix all ingredients for salad dressing and set aside for 5 mins.
Place all the veggies and cooked quinoa in a bowl.
Pour the salad dressing, toss them well, and adjust the seasoning.
Garnish with peanuts and avocado (optional) just before serving.
