Tomato pulao was a Sunday lunch specialty during my childhood. I would always ask for this when my mom gave an option to pick what i wanted her to make. It is a very simple rice dish that is cooked in tomato juice and some species. Normally my mom makes it by making the juice of the tomato, I have come up with an easy way by using store bought creamy tomato soup 🙂 ..
Ingredients
rice 1 cup
pudina/mint 1/2 cup chopped
garlic 4 pods sliced thin
red onion 1 sliced thin
cinamom stick 1/2 inch long
clove 2
redchilly powder 3/4 tsp or as required
tomato soup 2 cups (used Tomato Soup from Trader’s Joe)
water 1/2 cup
salt to taste
garam masala 1/2 tsp
oil 8 tsp
Method
Wash and soak rice in water for 10-20 mins.
Heat oil in a pan, add cinnamon stick, clove, red onions, garlic, pudina leaves and cook till the onions are soft.
Drain the water from rice and add it to the pan.
Fry till a nice aroma comes for about 4-5 mins.
Finally add the red chilly powder, garam masala, salt, tomato soup and the 1/2 cup water.
Cook on high flame till it starts to boil, then lower the flame for 10 mins or till rice is cooked.
Enjoy the tomato rice. It can also be served with raita on the side..
