Khandvi

Khandvi is one of my favorite dishes from Gujarati cuisine. I always was not sure how to make this. Was watching a TV show and saw the contestants make it soo easily, then i decided to try it. Below is my version, first attempt turned out great. It was soo tasty we can make many variations with it.

Ingredients

besan 1/2 cup
curd 1/4 cup
water 1 cup
salt to taste (about 1/2 tsp)
turmeric 1/2 tsp
ginger small piece
green chilly 1

For tadka
oil 2 tsp
mustard seeds 1/2 tsp
hing
coriander for topping

Method

Mix besan, curds, salt and water using a whisk in a glass bowl well so that the mixture has no lumps.
Take a non stick pan, turn heat on low to medium flame, pour in the besan mixture.
Keep stirring continuously with a whisk, don’t leave the mixture alone if not stirred continuously lumps will be formed.
Add in a piece of ginger and a slit green chilly for flavor. Remove these 2 after the mixture is cooked.
The besan mixture needs to form into a nice smooth paste, which will take 4-5 mins. Make sure the besan is completely cooked.
Now spread the mixture as thin as possible on the silicon pad (sheets used to bake cookies) or aluminum foil.
Let cool completely
Make long cuts then roll each one of them into bit size khandvi.
Then top it with tadka and coriander leaves.

Enjoy with mint chutney or just like that..
