Thinking of stuffed brinjal, all that comes to my mind is peanuts, sesame seeds, coconut and spices. This kind of stuffed brinjal cannot be eaten on a regular basis as it is pretty heavy. Also given the nature of brinjal it absorbs lot of oil. Hence decided to try something different, that is still tasty, quick and also healthy..
Here is my version of tasty, healthy and quick recipe for stuffed brinjal– Baked Achari Baingan.
small brinjal 6
rasam powder 1 tsp heaped
garam masala 1/2 tsp
dhaniya powder 1 tsp heaped
salt to taste
oil 2 tsp
pickle oil 1 tsp
pickle gravy 1/2 tsp
sugar 1/2 tsp
red chilly powder 1/2 tsp
Preheat oven at 350 degree F.
Mix all ingredients into a paste.. (Can try mixing in some peanut butter for a twist).
Slit the brinjals from other end, leave the stem side alone.
Smear paste on all sides on the inside of the brinjal.
In a oven safe pan heat 1 tsp ghee with 1 tsp oil.
When oil is heated up, add the masala filled brinjals.
Cook for 2 mins.
Cover the oven safe dish/pan with aluminum foil and make small slits on the top for air to pass.
Place the pan in the oven.
Cook for 10 mins and turn off the oven.
Let the pan sit inside the oven for 30 mins soo that the brinjal will cook slowly.
Enjoy with rice, roti or naan
