Shortbread cookies

Shortbread cookies are such an easy thing to make. They can be cut into our favorite shapes. For valentines day me and my kids made them in heart shape, dipped them in candy melts. Also tried another variation by stuffing the cookie with jam.

Ingredients

all-purpose flour 1 cup
salt 1/8 tsp
unsalted butter 1 stick @ room temperature
sugar 1/4 cup
vanilla extract 1/4 tsp

Method

Sift the flour with the salt and set aside.
In the bowl of your electric mixer (or with a hand mixer/spatula), beat the butter until smooth and creamy for 1 minute.
Add the sugar and beat until smooth for 2 minutes.
Add in the vanilla extract.
Gently stir in the flour mixture just until incorporated.
Flatten the dough into a disk shape, wrap in plastic wrap, and keep in freezer for 20 mins to make it firm.

Preheat oven to 350 degrees F with the rack in the middle of the oven. Line two baking sheets with parchment paper.
On a lightly floured surface roll out the dough cut it into your fav shape using cookie cutter.
Place prepare cookies on the baking sheets and keep in the refrigerator for about 15 minutes to firm up the dough so the cookies will maintain their shape when baked.
Bake for 8 – 10 minutes, or until cookies are very lightly browned.
Cool on a wire rack and enjoy !!!

Variation:

Cut the cookie dough into circles of 1/2 inch thick, in the middle make a small hole using the tip of the finger and fill that with 1/4 tsp of jam.
