Jalapeno Focaccia

Focaccia is a baked flat bread, that can be eaten as is or also used for a sandwich. Love the combination of cheese, jalapeno and bread baked together.

warm water 1 1/3 cup
active dry yeast 1 packet (2 1/4 tsps)
sugar 1 tblsp
all-purpose flour 3 1/2 cups
olive oil 3 tblsp
salt 1 1/2 tsp

for topping
Sea salt
Jalapeno slices

Heat water in microwave for 45 sec to warm it up.
Add yeast and sugar, mix well and keep in a warm place for 10 mins to let it rise/froth.
Add the remaining ingredients (except the ones for topping) and knead by hand for about 10 minutes.
Pour dough onto a lightly floured surface and divide into two equal pieces.
Place each piece into an oiled 9″ x 9″ pan.
Gently push and punch the round of dough so that it reaches each corner and edge of the pan.
Repeat for the second pan.
Preheat oven to 400 degrees.
Cover the dough with a wet towel and allow to rise is a warm place for 1 – 1 1/4 hours.
Drizzle olive oil over the top of each loaf and gently spread using clean fingers or a brush to cover the entire surface.
Add sea salt and jalapeno pieces and cheese.
Bake for 25 minutes or until edges and surface is golden brown.
Remove pans from the oven and transfer the bread to a wire rack and let it cool.
Serve warm or at room temperature.
