Eggless Custard Cookies

During my childhood, we used to eat a lot of cookies from the bakery. These are called as “Biscuits” in the bakery. They are buttery, crunchy and melt in the mouth. Traditionally we got Benne Biscuits (butter cookies) which were really yum and melted as you bit them. Here is a variation using custard powder, with very few ingredients and less prep time needed.

Ingredients

butter 1 1/4 cups
fine/powder sugar 3/4 cup
all purpose flour 1 1/4 cups
custard powder (Brown & Polson vanilla flavor) 3/4 cup

for coating

sugar 1/4 cup

Method

Preheat the oven to 375 degrees Fahrenheit.
Use room temperature butter (Note: microwave the butter in microwave for 30-40 secs to bring it to room temperature).
Add sugar to the butter and mix for 5 mins using a spoon/spatula.
Add all purpose flour, custard powder to the butter mixture.
Combine all the ingredients into a dough (Note: donot knead too much).
Make small balls, press the top of the cook in coating sugar and arrange them on a baking sheet.
Use a fork to make a pattern on the cookies. (optional step)
Bake the cookies 11-12 mins.
Let the cookies cool on a wire rack for 30 mins.
Enjoy the cookies with tea..
