Diwali the festival of lights, I call it festival of lights and sweets :). This is when I try out many new sweet recipes. This year made the chocolate nut roll, it was a hit with the kids as it had chocolate. Very quick recipe with very few ingredients. Modified the recipe I had seen online long ago..
Ingredients
Khoya/mawa 2 cups
sugar 1/2 cup
chocolate powder 2 tblsp
lightly roasted nuts 1/2 cup coarsely ground ( I used cashews, almonds, peacans)
Method
Heat the khoya with sugar in a pan on low flame, till it leaves the sides. Keep stirring continously.
Divide the mixture into 2 parts.
In one part mix in the chocolate powder, in the other part mix in the coarsely ground nuts mixture.
Grease your hands with ghee/clarified butter.
When the dough is still warm, on a wax paper/parchment paper spread the chocolate mixture in to a rectangle of 10 inch X 5 inch.
Roll the nut mixture into a log.
Place the pista roll on the chocolate sheet.
And then roll in such way that chocolate sheet will cover the nut roll evenly from all the sides.
Roll it back and forth to seal the joints and to make the roll tight.
Cover it with plastic wrap and refrigerate it for an 1 hr.
Cut them into 1/2 inch thick slices and enjoy..
