In the mode of eating healthy bought a big box of tofu. Added tofu in milkshakes for sometime. Got bored of drinking milkshakes so wanted to use tofu in other dishes as well. Tried different varieties of savoury dishes and sweet dishes. Here is one sweet recipe.. Kids and my neighbours loved it for the taste and even more knowing that it has tofu and no eggs 🙂 ..
olive oil 1/4 cup
butter 1/4 cup
cocoa powder 1/3 cup unsweetened
sugar 3/4 cup
silken tofu pureed 1/2 cup
vanilla extract 2 tsp
all purpose flour 1/2 cup
salt 1/4 tsp
pecans 1/2 cup chopped
Preheat the oven at 350F for 15 minutes.
Cut the butter into small pieces and melt the butter in the microwave for about 20-30 seconds. (stir once after 15 secs)
Remove the bowl from the microwave and let it cool for a minute.
Mix in olive oil.
Add the cocoa powder to the melted butter and mix it well until the cocoa powder dissolves using a whisk.
Add sugar slowly and mix well. (The mixture will look very stiff, don’t panic.)
Add 1/4 cup pureed tofu, mix well and then add remaining 1/4 cup pureed tofu.
Mix in vanilla extract and salt.
Add the flour next and mix till all flour is combined.
Finally mix in the chopped nuts.
(Note:Even now the dough is in a semi solid/spreadable butter consistency only. Its not as watery as a cake batter that you can pour in a pan.)
Grease a pan with the butter and sprinkle some flour to coat the sides.
Pour the batter evenly and bake it for 25 minutes.
Insert a toothpick to check if done. The toothpick will come out with some crumbs on it.
Let it cool for 2-3 hours completely before cutting into pieces.
