Khasta Kachori is a rajasthani snack. This is a super simple recipe, which has a lengthy process but its taste is worth all the effort. My family a gave an instant thumbs up, especially my husband who doesn’t comment on any food I make :).
moong dhal 1/2 cup
oil 1 tblsp
saunf/fennel seeds 1 tblsp
jeera 1/2 tsp
dhaniya seeds 1 tblsp
coriander leaves 1/4 cup
salt to taste
amchoor powder 1/2 tsp
red chilly powder 1 tsp
garam masala 1 tblsp
whole wheat flour 2 cups
fine rava /semolina 1/2 cup
ghee/clarified butter 3 tblsp
water to mix
salt 1 tsp
Soak moong dhal in 1 cup water for an hour.
Cook the moong dhal in microwave for 5-6 mins so that it still firm and done.
Drain the water and set it aside.
Coarsely grind jeera, saunf, dhaniya seeds.
Heat oil in a pan.
Add the corasely ground powder. Fry it for 2 mins till nice aroma on low flame.
Add the cooked moong dhal, red chilly powder, garam masala, amchoor powder, salt and coriander leaves.
Heat till all the moisture is removed.
Set aside and let it cool.
Mix all the ingredients for listed to make a stiff dough
Heat oil in a pan for deep frying.
Make small balls of the dough and flatten them into 3-4 inches diameter circles.
Place a tsp of the filling mixture and sell the sides in the shape of a modak.
Flatten it and reroll them again to make 3-4 inches diameter.
Drop these in the heated oil carefully and deep fry them on low flame so that they can rise and cook completely from inside.
Make a hole in the kachori top.
Add in chopped onions, chopped tomatoes, green chutney, dates chutney, coriander leaves, yogurt as filling and top it with sev and Enjoy!!!
