Roasted Butternut Squash Soup

Ingredients

butternut squash 2 lbs
apple 1 medium
red onion 1/2 cup
rosemary 1/4 tsp
salt to taste
pepper powder 1 tsp
water 3 cups
butter 1 tblsp

Method

Cut the butternut squash, apples and red onion into big pieces.
Heat butter in a pan till it starts to melt.
Add the chopped red onion, apples and butternut squash.
Sprinkle the rosemary, salt and pepper.
Heat on high flame with constant stirring till the butternut squash has softened.
Add water and let boil for 5 min on high flame.
Reduce the flame and boil for another 8 mins.
Transfer the above into vitamix (or any blender) and blend till smooth texture.
Enjoy the warm soup.
