Bagara Baingan

This is a recipe that needs no monitoring, all you need add the in the ingredients and let it cook. Bagara Baingan without peanuts is not complete. I was out of peanuts so used Jiffs peanut butter, extra butter in the peanut butter made the dish extra tasty :)…



small baingan/brinjals 5
til roasted 2 tsp
coconut 5 tsp
peanut butter 2 tblsp
tomato 1
ginger garlic paste 1 1/2 tsp
oil 5 tsp
mustard 1/2 tsp
tamarind paste 1/2 tsp

red chilly powder 3/4 – 1 tsp
turmeric 1/2 tsp
dhaniya powder 1 tsp
jeera powder 3/4 tsp
salt to taste

Grind roasted til and coconut, tomato into a fine paste.
Heat oil add mustard, ginger garlic paste and brinjal slit into 4 in oil fry for 4-5 mins.
Add ground masala, tamarind paste and rest of powders with 1/2 cup water.
Cover the lid and cook on low flame till brinjal is cooked (takes about 10-15 mins).
Serve hot with rotis.
