Sarson ka saag made from mustard greens is a very popular dish in Punjab. Mostly eaten with makki ki roti. I tried it with Bajri roti, which tasted good as well. Very aromatic and tasty recipe.
mustard greens 3 cups
ginger 2 inches
green chillies 2
onion 1 chopped
tomato 3 small chopped
garlic 4 pods
red chilly powder 1/2 tsp
garam masala 1/2 tsp
milk 1/2 cup
water 1 cup + 1/3 cup for besan paste
besan 2 tblsp
oil 4 tsp
Cut the mustard and rinse well.
In a pan heat mustard green, ginger and green chillies with 1 cup of water and cook on medium flame till the greens gets cooked.
Let cool and blend to a coarse paste in a mixer. Keep aside.
Heat the oil in another pan, add the onions and garlic and saute on a medium flame till the onions turn translucent.
Add tomatoes and cook till the mixture leaves oil.
Add the coarse paste and cook on a medium flame for 5 minutes, while stirring continuously.
Make a paste of besan with 1/3 cup of water.
Mix in the besan flour paste, milk, salt.
Cook on low flame for another 5 minutes, while stirring continuously.
Serve hot with roti on the side.
