Paneer Katti Roll

Ingredients

organic olive oil whole wheat wraps 1 pack (used from Trader Joe’s)
carrot shredded 1 cup
onion shredded 1 cup
dates chutney as per taste (got it from Indian store)

for stuffing
paneer cubed 1 cup
jeera 1 tsp
red chilly 2
coriander seeds 1 tsp
onion 3 finely cut
tomato 2 cut thin and long
bell pepper 1 cup
mango pickle sauce 1 1/2 tsp salt
oil 6 tsp
kasoori methi 1 tsp

Method

making stuffing
Make of powder of jeera, coriander seeds and red chillies. Set aside.
Heat oil in a pan add the onion and garlic.
Cook till onion turns translucent.
Add the powder made above and cook for 2 mins.
Add the tomatoes and cook till the onion leaves the sides.
Add kasoori methi, paneer and cook for 5 mins.
Lastly add the mango pickle sauce, mix well and cook for 5 more minutes.

making the rolls
Note: these rolls can be made with any store bought or home made roti.
Warm the wrap on a pan.
Remove from pan and spread a tblsp of the stuffing, 1 tsp of dates chutney, shredded carrots and shredded onions.
Roll it in the form of a burrito with one edge open.
Enjoy the paneer katti roll.
